Raw Red Pepper Risotto

Feeling hungry?
I hope so...



Risotto:
Buckwheat (sprouted)

Veggies:
Mushrooms

Slice thinly and marinate in Olive Oil, Sea Salt and Parsley.

Sauce:
Red Peppers
Cashews (soaked)
Sundried Tomatoes (soaked)
Basil

Parsley
Garlic
Lemon
Sea Salt
Agave Nectar ( just a touch)

Blend, add a bit of water or olive oil if needed. Once well mixed combine all your steps and enjoy! Yum, yum, yum...

Blend until real, real creamy then pipe into kisses and let chill. If your batter is too thick, let it chill before you pipe it. Goooood Luck!

Broccoli and Parsley Pesto

This is a simple and mega-delicious recipe.
Prepare to go wild for your veggies, cause this pesto is the perfect pairing!


Cashews (finely ground)
Parsley (fresh and a whole bunch of it!)

Basil
Broccoli
Garlic

Lemon
Sea Salt
Olive Oil

Blend on pulse!
Done and done, just like that!

*** I used broccoli in mine because I had some extra left over from a recipe and was curious. It's kind like a way to hide veggies in your pesto! Soooo clever. Also nuts are expensive when money is real tight I use half cashews half raw peanuts. Nuts can be sooo expensive so be careful how much you use, find tricks to cut those costs!

Peaches and Cream Pie!

This still haunts me....



Crust:
Almonds (finely ground)
Shredded Coconut
Agave Nectar

Blend your ingredients on pulse, once well mix press into your pie mold and dehydrate for 6-8 hours.

Filling (Cream):
Cashews (soaked)
Peaches
Coconut Butter
Agave Nectar
Vanilla Bean

Blend then let chill before using. This will help your cream thicken so it's easier to use.

Topping:
Peaches
Raisin
Agave Nectar
Cinnamon

Slice your peaches real thin and marinate with some raisins in your cinnamon and agave. I let mine marinate while the crust was dehydrating so the peaches would fully soake up all the flavour they could.
Now Combine all your step,

Shepherd's Pie

It's kinda creepy how "shepherd's pie-ish" this look

Your Meats:
Walnuts (soaked)
Onions
Parsley
Garlic
Sea Salt

-Blend on Pulse then dehydrate until it has a texture similar to ground beef. Gross yet intriguing.





Your Corns:
Just slice some corn off the cob, that's all this layer takes!



 Your Potatoes:
Cashews (soaked)
Cauliflower
Parsley
Garlic
Sea Salt

Slowly blend on pulse, do not overfill you blender. Blend in small amounts until your potatoes are creamy! And there you have it, Freshly served, hot out of the ole' food processor:

Blueberry White Chocolate Truffles.

This will be the death of store-bought treats.
And it should be,


Cashews (finely ground)
Blueberries (dehydrated)
Coconut Butter

Cacao Butter
Agave Nectar
Shredded Coconut

Blend on pulse, once everything is well mixed roll them into truffle and let chill.
I always dehydrate my berries for recipes like this so the batter isn't to runny. It makes the truffles stick together nicer.

Chocolate Pie Baby

When I was real young I use to dream of eating a pie that was completely made of chocolate,
Years later and not a single thing has changed...
Perfect!


Yah, The Crust:
Almonds (finely ground)

Shredded Coconut
Agave Nectar

Blend on pulse, taste, mega-yum, taste again. Now press into your pie mold and dehydrate for 4-6 hours or until it is firm enough to work with.


Filling:
Cacao Powder
Coconut Butter
Avocado
Agave Nectar

Vanilla Bean

Blend, blend, blend. You want it to be really creamy and real thick.

Garnish:
Berries of some sort, I used Strawberries, it's what I had!

Creamy Cashew Kale Chips

Get some of these and watch 'em disappear.
Bet you don't even get them more then five feet away from the dehydrator without snacking.





Batter:
Cashews (finely ground)

Basil
Garlic
Lemon

Sea Salt

Blend on Pulse.

Break your kale into bite size pieces, toss with your batter. To help the batter stick I generally toss my kale with a bit of Olive Oil before adding the batter. Then dehydrate until crispy and delicious.

Blueberry and Banana Cream Be Bop A Lula!

Stop what you are doing and make this recipe.
Then eat them all,
I did.


Crust:
- Almonds (finely ground)
- Agave Nectar


Blend on pulse. Once mixed and delicious press into crust molds.

Filling:
- Banana
- Coconut Butter
- Vanilla Bean

- Lemon
- Agave Nectar (just a touch)

Blend till creamy,  let chill before using.

Topping:
- Blueberries
- Agave Nectar

Toss your berries in a touch of sweet, sweet agave. Then top those treats!
So easy, and so fresh and practically all fruit so eating more than one isn't even an issue!

Raw Vegan Meat!

These are the steps,
This is what it takes,

RAW VEGAN MEAT

Weird how convincing it is eh?

The trick is walnuts, everytime. Pistachios do a good job but my fave are soaked walnuts.
Never let me down yet....

MEAT!
- Walnuts (soaked)
- Onions
- Olive Oil
- Garlic
- Oregano
- Sea Salt

Blend together on pulse, once everything is mixed you can eat it like a spread or dehydrate it. When it's dehydrated it will have a texture similar to ground beef (except not creepy and dead). I dehydrated mine with some raw tomatoe sauce spread over it. But you can change the spices you use to change the type of "meat" your recipe might need.

I used mine to make Sloppy Joe's!

Raspberry Truffles with White Chocolate Icing

How darling...


Raspberry Truffle:
Raspberries
Coconut Butter
Dates

Lemon

Blend until smooth, then pour into ice cube molds and leave in the freezer to thicken.

White Chocolate Icing:
Cacao Butter
Coconut Butter
Vanilla Bean
Agave Nectar


Lightly pipe onto the tops of each truffle and leave in the freezer. These little suckers need to stay cold or they'll start to melt right away. I used raspberries to garnish mine but I don't recommend doing this, they get to hard in the freezer.

Strawberry Cheesecake

Obviously this is happening,




Crust:
Almonds (finely ground)
Prunes


I found using prunes gave a softer base , more like the graham cracker ones that are typically used for cheesecake. Blend your almonds and prunes then let chill so you batter thickens. Once the batter is more firm line you cheesecake molds with your crust.

Filling:
Strawberries

Cashews (soaked)
Coconut Butter
Lemon
Ginger
Agave Nectar


Blend until creamy, you don't want any chunks. Then leave in the fridge to chill so it's easier to work with. Once chilled combine your filling with your base and garnish with some fresh strawberries.

Nanaimo Bars

Ok, ok I now these are circles,
but I didn't have and square molds to use at the time soooo....
Use the old imagination.



Base:
Almonds (finely ground)
Shredded Coconut
Cacao Powder

Dates

Blend on pulse, then line your molds.

Middle:
Cashews (soaked)
Coconut Butter

Vanilla Bean
Lemon Juice

Agave Nectar

Blend until creamy then chill to thicken.
Top:
Coconut Butter
Cacao Butter

Cacao Powder
Agave Nectar
Sea Salt ( just a touch)

Blend until smooth. Now you can combine all your layers and enjoy!

Gooey Cacao Mint Patties

Soft and Sticky,



Almonds (finely fround)
Buckwheat Groats (sprouted and finely ground)
Coconut Butter

Cacao Nibs
Fresh  Mint
Cacao Powder
Agave Nectar

Blend on pulse until everythig is well mixed. Then roll into balls and flatten with a fork, I wet the fork lightly so it wouldn't stick into my treats!

Garnish:
Cacao Powder
